  • Cleaned squid 135g
  • 1 Tbsp minced green onion
  • 1 Tbsp minced garlic
  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sesame seeds
  • 1 Tbsp perilla oil (Korean sesame oil)
  • 3 Tbsp cooking oil

Cooking Instructions

First, we’ll prepare the bok choy. Trim the tough ends of the bok choy and wash it thoroughly under running water to remove any dirt or debris. After trimming, it should weigh about 100g. This prepared bok choy is now ready for cooking.

Clean the fresh squid thoroughly, then cut it into bite-sized pieces. Typically, the body can be cut into rings, and the tentacles into manageable lengths. We want to preserve its chewy texture.

Now, let’s create the aromatic base for our delicious stir-fry: fragrant scallion and garlic oil. Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add 1 tablespoon of minced green onion and 1 tablespoon of minced garlic. Stir-fry slowly, making sure not to burn the scallions and garlic, until a gentle aroma is released. This step is crucial for building flavor.

Once the scallion and garlic oil is golden and fragrant, add the prepared squid to the pan. Stir-fry quickly over high heat. You’ll see the squid start to change color as it cooks. Be careful not to overcook the squid, as it can become tough.
