Step 1
If the sweet potato greens are tender, you might only need to trim the very tough ends. If they are young and tender, you can use them as is. Blanch the sweet potato greens in boiling water for about 5 minutes until they become tender but not mushy. Drain them and rinse thoroughly under cold running water twice to remove any impurities and a slight ‘green’ taste.

Once the water is squeezed out from the blanched sweet potato greens, cut them into bite-sized pieces. About 4-5cm in length is ideal for a pleasant texture and easy eating. You can adjust the length to your preference.

Heat a wok or a deep pan over medium heat and add 2 tablespoons of olive oil. Add 1 tablespoon of minced garlic and sauté until fragrant, being careful not to burn it. Adjust the heat to medium to prevent the garlic from charring.
