Hello everyone! Today, I’m sharing a recipe for ‘Saeujeot Stir-fried Zucchini,’ a simple yet incredibly flavorful side dish that’s perfect for any occasion, especially during holidays or when hosting guests. To overcome the common issue of zucchini breaking apart and not absorbing flavors well when stir-fried, we’ll be pre-salting the zucchini in saeujeot for about 10 minutes before cooking. This method ensures the zucchini is deeply infused with a savory umami flavor and retains its beautiful shape. It’s so delicious, it’ll become a fast favorite!

**[Ingredients]**
* 1 Zucchini
* 1 Tbsp Saeujeot (fermented shrimp) (heaping)
* 1 Tbsp Minced Green Onion
* 1/2 Tbsp Minced Garlic
* 1.5 Tbsp Cooking Oil
* 1 Tbsp Perilla Oil or Sesame Oil
* Sesame Seeds, for garnish
* 1/2 Onion

**Tip:** My measurements are based on a standard Korean rice spoon (1 Tbsp).

Cooking Instructions

Step 1

First, wash the zucchini thoroughly and trim off the ends. Then, cut the zucchini in half lengthwise and slice it into semi-circles about 0.3cm thick. Peel and thinly slice the half onion.

Step 2

Place the sliced zucchini in a pan or bowl. Sprinkle 1 heaping tablespoon of saeujeot evenly over the zucchini and let it sit for about 10 minutes. Pre-salting the zucchini with saeujeot like this beforehand allows the seasoning to penetrate deeply, preventing it from breaking apart and ensuring a well-balanced flavor when stir-fried.

Step 3

To the zucchini that has been marinating in saeujeot for 10 minutes, add the sliced onion, 1/2 Tbsp minced garlic, and 1.5 Tbsp cooking oil. Also, add 2 Tbsp of water, cover the pan with a lid, and turn the heat to medium-low.

Step 4

Stir-fry over medium-low heat for about 4-5 minutes. While cooking, keep the lid on and stir gently occasionally. This method helps the zucchini cook evenly and remain moist without burning, while allowing the seasonings to meld beautifully.

Step 5

Once the zucchini is tender, add 1 Tbsp of minced green onion and 1 Tbsp of perilla oil or sesame oil. Give it a quick toss. Finally, sprinkle with sesame seeds to complete this delicious Saeujeot Stir-fried Zucchini. Enjoy it with a bowl of hot, steamed rice!
