Dough Ingredients- 250g Bread Flour (High-gluten Flour)
- 1.5 Tbsp Granulated Sugar
- 3 Pinches Salt
- 1 tsp Instant Dry Yeast
- 1.5 Tbsp Skim Milk Powder
- 150ml Lukewarm Water
- 1 Large Egg (Room Temperature)
- 20g Unsalted Butter (Softened at Room Temperature)
Cream Cheese Filling- 2 Tbsp Cream Cheese (Softened at Room Temperature)
- 1 tsp Strawberry Powder
- 1 Tbsp Powdered Sugar
- 1 Large Egg Yolk
- 1 Tbsp Lemon Juice
Egg Wash- 1 Large Egg Yolk
- 1 tsp Milk
- 2 Tbsp Cream Cheese (Softened at Room Temperature)
- 1 tsp Strawberry Powder
- 1 Tbsp Powdered Sugar
- 1 Large Egg Yolk

Step 1
In a large bowl, combine the bread flour, sugar, salt, instant dry yeast, and skim milk powder. Create a well in the center and add the lukewarm water and the egg. Mix them together first. Once no dry flour remains, add the softened butter. Knead the dough by hand, stretching and folding it, for about 10-15 minutes until it becomes elastic and smooth. You’ll know it’s ready when you can stretch a piece of the dough thinly into a ‘window pane’ without tearing.

Cover the bowl with a damp cloth or plastic wrap and let the dough rise in a warm place (around 30°C or 86°F) for 50 minutes for the first proofing. The dough should double in size.

After the first proof, gently punch down the dough to release the gases. Transfer the dough to a clean work surface, divide it into equal portions (e.g., 6-8 pieces), and gently shape each piece into a round ball. Cover the dough balls with a damp cloth and let them rest for 15 minutes for a second proof (bench rest). This makes the dough easier to handle.
Step 4
While the dough is resting, prepare the strawberry cream cheese filling. In a bowl, cream the softened cream cheese until smooth. Then, mix in the strawberry powder, powdered sugar, egg yolk, and lemon juice until you have a smooth, lump-free filling. Transfer the filling to a piping bag and refrigerate it until ready to use.

Once the bench rest is complete, gently degas the dough balls again. Divide them into your desired sizes and re-shape them into round balls. Be careful not to knead them too forcefully at this stage.

Gently flatten each dough ball with your palm or a rolling pin. Pipe a generous amount of the strawberry cream cheese filling in the center. Fold the dough in half or roll it up like a Swiss roll, then pinch the edges firmly together to seal it completely. Ensure the seams are well-sealed to prevent the filling from leaking out during baking.

Place the shaped breads onto a baking sheet lined with parchment paper, leaving some space between them. Make a shallow cut on the top of each bread with scissors for a decorative finish. Cover with a damp cloth and let them undergo a second proof for about 40 minutes in a warm place. They should look nicely puffed up. Preheat your oven to 180°C (350°F). Bake for approximately 15 minutes, or until the tops are a beautiful golden brown. Baking time may vary depending on your oven.
