Ingredients for Sweet Tanghulu- 10 fresh strawberries
- 100g granulated sugar (white sugar)
- 50g water
- 1 Tbsp corn syrup (for added sweetness and gloss)
Cooking Instructions
Step 1
First, prepare your star ingredient: the strawberries. Wash them thoroughly under running water. It’s crucial to dry them completely with paper towels or a clean cloth, as any remaining moisture can prevent the sugar coating from hardening properly. Once dry, carefully remove the green stems.
Step 2
Now, let’s make the essential sugar syrup for your Tanghulu. In a saucepan, combine the granulated sugar (100g), water (50g), and corn syrup (1 Tbsp). Place it over low heat and let it cook gently. Resist the urge to stir until the sugar has completely dissolved; this helps prevent crystallization. Once the sugar is dissolved and the mixture begins to simmer, continue cooking without stirring until it reaches about 100-110°C (212-230°F). If you don’t have a thermometer, you’re looking for the syrup to turn a light amber color. (Caution: Overcooking can burn the syrup, so keep a close eye on the heat!)

Quickly dip the prepared strawberries into the hot syrup to coat them evenly. Be very careful as the syrup is extremely hot! You can skewer the strawberries onto sticks and dip them, or use a spoon to gently coat each berry with a thin, even layer of syrup. Immediately after coating, transfer the strawberries to a cold surface (like over an ice bath, or a cool, breezy spot like a balcony) to cool rapidly. This step is key to achieving a hard, crunchy sugar shell. Let them chill and harden for about 10-15 minutes.
