Scone Dough Ingredients- 3 Tbsp Heavy Cream
- 250g Almond Flour
- 30g Coconut Flour
- 30g Erythritol (adjust to taste)
- 1 tsp Baking Powder
- Pinch of Salt
- 1 Large Egg (room temperature)
- 45g Melted Butter or Coconut Oil
- 2 Tbsp Heavy Cream
- 1 tsp Vanilla Extract
- Approx. 150g Fresh Strawberries (diced)
Vanilla Icing Ingredients- 45g Powdered Erythritol (adjust to taste)
- 1/2 tsp Vanilla Extract
- 3 Tbsp Heavy Cream
- 45g Powdered Erythritol (adjust to taste)
- 1/2 tsp Vanilla Extract
- 3 Tbsp Heavy Cream
Cooking Instructions
Step 1
Preheat your oven to 175°C (350°F). Ensuring your oven is at the optimal temperature is the first step to perfectly baked scones.

In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Whisk them together thoroughly with a whisk or spatula. It’s important to mix the dry ingredients well to avoid any clumps.

In a separate small bowl, whisk together the egg, melted butter (or coconut oil), 2 Tbsp of heavy cream, and vanilla extract until well combined.
