Main Ingredients

  • 20 fresh large shrimp
  • 1/2 medium onion
  • 1/3 bell pepper (any color)
  • 1/4 small zucchini
  • 1 Korean green chili pepper (optional)
  • 5 cloves garlic
  • A pinch of toasted sesame seeds
  • Vegetable oil, for cooking

Seasoning

  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking wine (like mirin)
  • A pinch of salt

Cooking Instructions

Step 1

First, let’s prepare the shrimp. Trim the long whiskers from the shrimp with scissors. Then, insert a thin skewer into the second segment from the head on the shrimp’s back and gently pull it out to remove the deveined line. This ensures the shrimp are clean and pleasant to eat.

Step 1

Step 2

At the tip of the shrimp’s tail, there’s a small sac containing water. Gently press it to release the water. Rinse the shrimp thoroughly under cold running water. Pat the cleaned shrimp dry with a paper towel.

Step 2

Step 3

Now, let’s prepare the vegetables. Wash the zucchini, bell pepper, and Korean green chili pepper under running water. Slice the zucchini into half-moons about 0.5 cm thick. Remove the seeds from the bell pepper and slice it into rectangles similar in size to the zucchini. Slice the green chili pepper diagonally to add a touch of spice. Peel and thinly slice the garlic. Peel and rinse the onion, then slice it into pieces similar in size to the bell pepper.

Step 3

Step 4

Heat a frying pan over medium heat and add a generous amount of vegetable oil. Add the sliced garlic and onion, and stir-fry until fragrant. Once the garlic starts to turn golden, add the zucchini, bell pepper, and green chili pepper. Continue to stir-fry for about 2-3 minutes until the vegetables are slightly tender-crisp. It’s important to maintain the vegetables’ slight crunch.

Step 4

Step 5

Add the prepared shrimp to the pan and stir-fry quickly until they turn pink. Be careful not to overcook the shrimp, as they can become tough. Once the shrimp change color, add the cooking wine and stir-fry briefly. This helps eliminate any fishy odors and enhances the flavor.

Step 5

Step 6

Finally, add the oyster sauce and stir everything together well. If the dish needs more seasoning, add a pinch of salt to taste. Once all ingredients are harmoniously cooked, turn off the heat. Sprinkle with toasted sesame seeds for an extra nutty aroma. Your ‘Succulent Shrimp and Vegetable Stir-Fry’ is now ready! It’s best enjoyed immediately while warm.
