  • 6 tsp Stevia (adjust to taste)

Prepare the strawberries by washing them thoroughly and patting them dry. You can use them whole or slice them into halves or quarters, depending on your preference. Using fresh, high-quality strawberries will significantly impact the final taste of your jam.

Evenly sprinkle the stevia over the prepared strawberries. You want them to be lightly coated. Taste a strawberry to gauge its natural sweetness and adjust the stevia amount accordingly; too much can make the jam overly sweet. Once coated, transfer the strawberries directly into a pot and place it over medium heat.

As the strawberries heat up, they will release their natural juices, creating a good amount of liquid in the pot. Continue to simmer gently over medium heat for about 20 minutes, or until most of the liquid has evaporated and the mixture has thickened into a jam-like consistency. Avoid stirring too frequently to allow the strawberries to break down naturally.

During the simmering process, skim off any foam that rises to the surface of the jam. Removing the foam will result in a clearer jam with a cleaner taste.

To check the jam’s consistency, dip a spoon into it. The jam is ready when it coats the back of the spoon and slowly drizzles off. If it’s too thin, continue simmering for a bit longer. Let it cool completely before storing it in the refrigerator. It tastes even better when chilled!
