Main Ingredients- 1 cucumber
- 200ml cider (like Sprite or clear soda)
- 1 red chili pepper
Pickling Liquid Seasoning- 1 Tbsp 2x concentrated vinegar
- 0.5 Tbsp salt
- 1 Tbsp brown sugar
- 1 Tbsp 2x concentrated vinegar
- 0.5 Tbsp salt
- 1 Tbsp brown sugar
Cooking Instructions
Step 1
First, let’s prepare the cucumber. Gently scrape off any prickly bits on the cucumber surface with the back of a knife. Then, rub the cucumber with coarse salt and rinse thoroughly under running water. Finally, trim off the very ends as they can sometimes taste bitter. Your cucumber is now prepped!
Step 2
Now, it’s time to thinly slice the cucumber. Using a peeler will help you achieve thin, uniform slices, making the pickles wonderfully crisp and delicious. Hold the cucumber and carefully peel it into thin slices.
Step 3
To make them easier to fit into the container and eat, cut the sliced cucumber in half. Bite-sized pieces are perfect for enjoying.
Step 4
Thinly slice the red chili pepper. This will add a nice color and a hint of spice. Removing the seeds beforehand is optional if you prefer less heat.
Step 5
Place the sliced cucumber into a clean glass jar or container. Try not to pack it too tightly, leaving a little space is ideal.
Step 6
Add the sliced red chili pepper on top of the cucumber slices. The vibrant colors will make the pickles more appealing.
Step 7
Let’s make the delicious pickling liquid. In a small bowl, combine 1 Tbsp of 2x concentrated vinegar, 1 Tbsp of brown sugar, and 0.5 Tbsp of salt. Stir until the sugar and salt are completely dissolved. Ensuring they dissolve fully will result in a clear and well-balanced pickling liquid.
Step 8
Carefully pour the prepared pickling liquid over the cucumber in the container. Make sure to add enough liquid to cover the cucumbers.
Step 9
Finally, pour in the cider until the cucumbers are fully submerged. The cider adds a delightful fizziness and sweetness, completing your apple cider vinegar cucumber pickles!
Step 10
Seal the container tightly with a lid and refrigerate for at least 1 hour before serving. While they are tasty right away, letting them pickle in the fridge will allow the flavors to meld, making the cucumbers even crispier and more delicious. Enjoy your homemade sweet and sour cucumber pickles!
