Quick Andong Jjimdak: As Simple as Ramen, but as Delicious as Andong Guk Market!
Solve your chicken and vegetable needs with what’s in your fridge! This Jjimdak is so delicious that even Andong natives are impressed. For those on a diet, try it with chicken breast for a different twist. Everyone loves it, making it perfect for hosting guests.
Main Ingredients- 1 whole chicken (cut for stir-fry)
- 2 potatoes
- 1/2 onion
- 30g glass noodles (dangmyeon)
- 3 perilla leaves (kkaennip)
Sauce Ingredients- 1 chicken stock cube (or dashi broth)
- 2 Tbsp soy sauce
- 2 Tbsp dark soy sauce (for color and depth; add more regular soy sauce if unavailable)
- 3 Tbsp oligosaccharide (or sugar)
- 500ml water

Cooking Instructions
Step 1
The essential ingredients are chicken, perilla leaves, chicken stock for that savory depth, soy sauce, and oligosaccharide (which can be substituted with sugar).
Step 2
Prepare any vegetables you have in your refrigerator. Cut the potatoes into large chunks and thinly slice the onion. (Feel free to add carrots, green onions, or even chili peppers if you like!)
Step 3
There’s no need to pre-soak the glass noodles. Simply rinse them in cold water when you start cooking, and they’ll soften beautifully as the dish simmers.
Step 4
To remove any impurities or gamey smell from the chicken, blanch it first. Bring water to a boil in a pot, add the chicken pieces, and cook for about 1 minute. Skim off any foam that forms, then drain the water completely. Rinse the chicken pieces thoroughly under cold water.
Step 5
Return the cleaned chicken to the pot. Add all the prepared sauce ingredients: chicken stock, soy sauce, dark soy sauce, oligosaccharide, and water. Bring to a boil over high heat, then reduce to medium heat, cover, and simmer for 20 minutes. Try not to stir too often during this time, as it can break the vegetables. Relax with a cup of tea while it cooks!^^

After 20 minutes, add the soaked glass noodles and the prepared potatoes and onion to the pot. Continue to cook for another 5 minutes. Finally, add a generous amount of fresh perilla leaves and let it simmer briefly. Your delicious Andong Jjimdak is ready!
