This kimchi is incredibly simple to make, especially if you have some fresh green onions growing at home. Watching the show, I thought, ‘Anyone can easily make this!’ and after trying it myself, that couldn’t be more true. Let’s get started on this irresistibly simple and delicious Green Onion Kimchi!

Basic Ingredients

  • 7 fresh green onions (focus on the white root parts)
  • 0.5 Tbsp minced garlic
  • 0.3 Tbsp minced ginger
  • 2 Tbsp anchovy sauce
  • 2 Tbsp gochugaru (Korean chili flakes) – adjust to your preference
  • A pinch of toasted sesame seeds (for garnish and flavor)

First, prepare 7 fresh green onions. The key to great green onion kimchi is the crisp texture of the white root parts. The green leafy parts can release a lot of sap, which can affect the kimchi’s taste, so it’s best to omit them. Use only the firm, white root sections. Cut these white parts into pieces about two finger-widths long. Cutting them too long might prevent the seasoning from penetrating evenly, while cutting them too short could diminish the texture, so aim for a consistent, bite-sized length.

Place the prepared green onions into a mixing bowl. Now it’s time to season. Add 0.5 Tbsp of minced garlic and 0.3 Tbsp of minced ginger. Then, for a boost of savory flavor, add 2 Tbsp of anchovy sauce. Finally, add the gochugaru, which will give the kimchi its vibrant color and spicy kick. The show mentioned adjusting the amount of gochugaru to your liking. I used 3 Tbsp because I had a good amount of green onions, which resulted in a deep red color. Depending on the quantity of your green onions, 2 to 3 Tbsp is a good range to consider for optimal flavor and color.

Lastly, sprinkle in a desired amount of toasted sesame seeds for a nutty aroma and flavor. Now, gently mix all the ingredients together with your hands until the green onions are evenly coated with the seasoning. The trick here is to toss them gently to avoid bruising the delicate green onions. Be careful not to mix too vigorously.
