Main Ingredients- 5 “Oi-ji” pickles (Korean cucumber pickles)
- A little corn syrup (or oligosaccharide) for pickling the “Oi-ji”
Seasoning Ingredients- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Oligosaccharide (adjust sweetness to taste)
- 1 Tbsp Toasted sesame seeds (sesame powder)
- 1/2 stalk Green onion (preferably the white parts)
- 1/2 Tbsp Minced garlic
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Oligosaccharide (adjust sweetness to taste)
- 1 Tbsp Toasted sesame seeds (sesame powder)
- 1/2 stalk Green onion (preferably the white parts)
- 1/2 Tbsp Minced garlic

1. Prepare and Slice the “Oi-ji”: First, rinse the 5 “Oi-ji” pickles thoroughly under running water. Once the excess water is removed, slice the “Oi-ji” thinly. Slicing them not too thick ensures they absorb the seasoning well and results in a pleasant texture. (You can also slice them diagonally or into rounds according to your preference.)

2. Mince the Green Onion: Prepare the green onion for the seasoning by washing it clean, focusing on the white parts. Then, mince it as finely as possible. Minced green onion adds flavor to the seasoning and helps to balance the saltiness of the “Oi-ji”.

3. Marinate the “Oi-ji”: To the sliced “Oi-ji”, first add 2 tablespoons of gochugaru and 2 tablespoons of oligosaccharide. Adjust the amount of oligosaccharide considering the saltiness of the “Oi-ji”. Gently mix the “Oi-ji” to coat them evenly with the chili flakes and oligosaccharide, and let them sit for about 5 minutes to allow the color to penetrate.
