Main Ingredients

  • 4 sheets of square fish cake (eomuk)
  • 1/2 onion
  • Carrots, to taste (approx. 1/4 of a carrot)

Seasoning

  • 1/2 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp oligosaccharide (or corn syrup/sugar)

Cooking Instructions

Step 1

First, lightly rinse the square fish cakes under running water. For a softer texture, you can briefly steam them over simmering water or blanch them in boiling water for about 30 seconds. Once blanched, squeeze out any excess water and thinly slice them into strips, about 0.5 cm thick.

Step 1

Step 2

Peel and thinly slice the onion into strips. Wash and julienne the carrots to match the thickness of the onion. Cutting them to a similar length will make the stir-fry look more appealing and easier to eat.

Step 2

Step 3

Now, let’s prepare the seasoning. Add the sliced fish cakes, onion, and carrots to a pan. Pour in 1 tablespoon of soy sauce and 1/2 tablespoon of oyster sauce. The oyster sauce will add a wonderful depth of umami flavor.

Step 3

Step 4

Turn the heat to medium and stir-fry everything for about 1-2 minutes, allowing the sauce to coat the ingredients evenly. Cook until the fish cakes soften slightly and the vegetables are just tender-crisp. Be careful not to overcook, as the fish cakes can become chewy.

Step 4

Step 5

Once the vegetables are partially cooked, add 1 tablespoon of oligosaccharide for sweetness and a glossy finish. If you don’t have oligosaccharide, corn syrup or sugar can be used as substitutes. Sprinkle a pinch of sesame seeds on top for added aroma and flavor.

Step 5

Step 6

Finally, stir-fry for another 30 seconds to 1 minute until everything is well combined and the sauce has slightly thickened. The key is to quickly stir-fry to ensure the seasoning adheres beautifully to the fish cakes and vegetables. Transfer the delicious pan-fried fish cake to a serving plate. Enjoy your flavorful side dish!
