  • 1 head of well-fermented kimchi (approx. 1kg)
  • 600g pork ribs, cut for stew

First, prepare 600g of pork ribs cut for stew. It’s more convenient to buy ribs already trimmed for stew at the butcher’s. Rinse the ribs under running water once to remove any chill.

Now, get your pressure cooker ready. Place the rinsed pork ribs at the bottom of the pressure cooker. Then, add the whole head of kimchi on top, or you can cut it into bite-sized pieces and layer them.

Pour about 2 cups (400ml) of water, just enough to cover the kimchi and pork ribs. Using kimchi brine will add even more depth of flavor. Close the pressure cooker lid, bring to high heat, and once the weight starts whistling, reduce the heat to medium-low and simmer for about 20 minutes. Including the resting time is recommended.
