Simple Pork Rib Stew Made in a Rice Cooker
Do you find braised pork ribs too difficult or complicated to make? Try making them effortlessly using an electric rice cooker, a common kitchen appliance. This recipe will show you how to make an incredibly simple and delicious braised pork rib dish. Even beginners can achieve a rich, savory flavor and incredibly tender ribs thanks to the slow cooking process in the rice cooker.
Main Ingredients- Pork ribs 2 ‘geun’ (approx. 600g)
- 1 Onion (medium size)
- 1 Scallion (green onion)
- 2 heads of Garlic (whole cloves)
Seasoning Ingredients- Soy sauce 1/2 cup (approx. 100ml)
- Cooking wine or Mirin 1/4 cup (approx. 50ml)
- Sugar 3 Tbsp (tablespoons)
- Ginger powder 1/2 tsp (teaspoon)
- Black pepper powder 1 tsp (teaspoon)

Cooking Instructions
Step 1
First, soak the pork ribs in cold water for about 10 minutes to remove any blood. Rinse them thoroughly under running water. Properly removing the blood is crucial for eliminating any gamey odor. After draining, place the ribs in plenty of water and soak them in the refrigerator or at room temperature for about 4 hours to bleed out. It’s even better if you change the water once or twice during this process.
Step 2
In a blender, combine all the seasoning ingredients: soy sauce, cooking wine (or mirin), sugar, ginger powder, and black pepper powder. Blend until smooth. Grinding the seasonings finely helps them penetrate the ribs better and contributes to a tender texture. You can also add the whole garlic cloves to the blender for enhanced garlic flavor.
Step 3
Rinse the bled pork ribs again and drain them well. Pour the blended sauce over the pork ribs. Add the whole garlic cloves, roughly chopped onion, and chopped scallions to the bowl. Gently mix everything together with your hands, ensuring the sauce coats the ribs evenly. Allowing the ribs to marinate for about 10-15 minutes will help the flavors meld nicely.
Step 4
Transfer the marinated pork ribs into the inner pot of your electric rice cooker. Select the ‘Mixed Grain Cook’ or ‘Stew’ function on your rice cooker. The ‘Mixed Grain Cook’ function cooks at a lower temperature for a longer time compared to the regular white rice setting, which is excellent for tenderizing the ribs. (If your rice cooker has a ‘Stew’ function, you can use that instead.) Once cooking is complete, resist the urge to open it immediately. Let it rest on the ‘Keep Warm’ setting for an additional 30 minutes to allow the flavors to deepen and meld beautifully.
