Easy Scones for Baking Beginners Using Pancake Mix!
Accurate measuring is key in baking, and it can be challenging for beginners! Today, we’re making scones, one of the easiest baked goods, using a store-bought pancake mix. These mixes often contain flour, cream, and cheese powder, so all you need are eggs and butter for a truly simple and delicious result. Even if you’re new to baking, you’ll feel a great sense of accomplishment making these scones yourself. Let’s bake together!
Main Ingredients- 1 packet (215g) Hotcake Mix (store-bought pancake mix)
- 1 fresh egg
- 2 tablespoons butter

Cooking Instructions
Step 1
Crack one fresh egg into a bowl and whisk it thoroughly until fully beaten. Ensure the yolk and white are well combined.
Step 2
Set aside about half of the beaten egg. Melt 2 tablespoons of butter in the microwave until smooth. Then, pour the melted butter into the reserved half of the beaten egg and mix well. This creates a rich buttery liquid.
Step 3
Pour one packet (215g) of store-bought pancake mix into a large bowl. Gradually pour in the egg-butter mixture while gently mixing with a spatula or fork. Don’t overmix.
Step 4
Initially, the ingredients might seem separate, but as you gently stir with a spatula, the mixture will start to come together, forming a dough. Be careful not to stir for too long.
Step 5
Once the dough begins to clump, gently knead it with your hands either in the bowl or on a clean surface. Knead by gently pressing and folding until it forms a cohesive, slightly sticky dough. Treat it gently, like you would a soft dough.

Your dough is ready when it forms a single, smooth ball without any dry bits of flour. Avoid over-kneading, as this can result in tough scones.

To shape the scones, place the dough into a zip-top bag and gently press it into a round, slightly flattened disc. This prevents sticking and helps create a uniform shape. Chill the shaped dough in the refrigerator for about 10 minutes. This step helps the scones hold their shape during baking.

Remove the chilled dough from the bag and divide it into 6 equal portions. Carefully place each portion onto a baking sheet lined with parchment paper, ensuring there is enough space between them as they will puff up during baking.

Using a pastry brush, lightly coat the top of each scone with the reserved egg wash. This will give them a beautiful golden sheen and a lovely crust once baked.

Bake in the preheated 180°C (350°F) oven for about 15 minutes, or until the scones are golden brown. Baking times may vary slightly depending on your oven, so keep an eye on them.
