Now it’s time to add the seasonings. Add 0.5 tsp of ground ginger (or finely minced fresh ginger) and 1 tsp of ground garlic (or finely minced fresh garlic) to the lightly pickled radishes. If you like a bit of color and mild heat, thinly slice a few red and green chilies and add them in. Gently toss everything together to ensure the radishes are evenly coated with the seasonings.

Time to make the kimchi brine! Pour about 500ml of cold soda water (or sparkling water) over the radishes, ensuring they are submerged. Gently stir to dissolve any powders. If after a few days the liquid level drops and exposes the radishes, add a little more soda water to keep them fully submerged. Serve chilled for the best taste!
