Feeling a bit queasy after a night out, or craving something warm and comforting for dinner? This super simple soft tofu stew can be whipped up in just 5 minutes! We’ve adapted a recipe from a famous chef to make it incredibly easy and quick for anyone to follow. The velvety texture of soft tofu combined with a savory, slightly spicy broth is perfect for a hangover cure or a satisfying meal.
Key Ingredients
- Soft Tofu 1 pack (approx. 300-400g)
- Jjinjin Ramen Spicy Flavor Ramen Soup Base 1 packet
- Eggs 2 large
- Oyster Sauce 1/2 Tbsp
- Water 550ml
Cooking Instructions
Step 1
Pour 550ml of water into a pot. Add the Jjinjin Ramen Spicy Flavor soup base and the dried vegetable packet. Bring the water to a rolling boil before proceeding to the next step. (Tip: You can save the ramen noodles for another time if you like!)

Open the pack of soft tofu and carefully break it into bite-sized pieces (about 3-4 chunks per pack) using a spoon or knife. Gently add the tofu pieces into the boiling broth in the pot. Handle with care to avoid breaking the tofu too much.

In a measuring cup or a small bowl, crack two large eggs and beat them lightly with a fork or whisk until well combined. Properly beating the eggs will help them disperse smoothly into the stew.
Step 4
Add 1/2 tablespoon of oyster sauce to the simmering pot of tofu stew. Oyster sauce adds a wonderful savory depth and umami, making the broth significantly richer.

Maintain medium heat and ensure the stew is continuously boiling. Boiling the stew well allows the tofu to absorb the flavors and the egg to cook beautifully.
Step 6
Once the stew is boiling vigorously, slowly drizzle the beaten egg mixture evenly over the surface of the pot. The egg will cook into delicate ribbons, which looks appealing and tastes delicious. Let it simmer undisturbed for a moment until the egg is mostly set.
Step 7
When the egg is mostly cooked and the broth has slightly reduced, your stew is nearing completion. Check that the soft tofu and egg are well integrated and simmering nicely.
