We’re sharing a recipe for 5-minute mini potato pancakes that are crispy on the outside and tender on the inside, perfect as a snack for kids or an appetizer for adults.

Pancake Ingredients
  • 2 Potatoes
  • 2 Tbsp Potato Starch
  • A little Cooking Oil
  • 1 tsp Salt

Delicious Dipping Sauce
  • 3 Tbsp Soy Sauce
  • 1 tsp Minced Chili Pepper (adjust to taste)
  • 1 tsp Minced Green Onion
  • 0.5 Tbsp Toasted Sesame Seeds
  • 1 tsp Vinegar
  • 1 tsp Cooking Wine (Mirin, etc.)

Cooking Instructions

Step 1

First, prepare 2 potatoes. We recommend using a mandoline slicer to shred the potatoes as thinly as possible. In a bowl, combine the thinly sliced potatoes with 2 tablespoons of potato starch and 1 teaspoon of salt. Use a spoon to mix well, ensuring the starch coats all the potato shreds evenly. This step is crucial for achieving a crispy texture.

Step 2

Generously coat a frying pan with cooking oil and preheat it over medium heat. Once the oil is hot, use a spoon or chopsticks to place portions of the coated potato shreds into the pan, forming small, round pancakes about 7-10 cm in diameter. Spreading the potatoes thinly will help them become crispy and cook through quickly, allowing for a 5-minute completion. Aim for a flat, circular shape.

Step 3

Cook over medium-low heat until the potato pancakes turn a beautiful golden brown, similar to the picture. Flip them to ensure even cooking on both sides. Once golden and crispy, your simple mini potato pancakes are ready! While you can make larger ones, mini pancakes are convenient for individual servings, cook faster, and are easier to manage during frying.

Step 4

Let’s make a delicious dipping sauce to go with your potato pancakes. In a small bowl, combine 3 tablespoons of soy sauce, 1 teaspoon of minced chili pepper (add more if you like it spicier), 1 teaspoon of minced green onion, 0.5 tablespoon of toasted sesame seeds, 1 teaspoon of vinegar, and 1 teaspoon of cooking wine. Stir everything together until well combined.

Step 5

You can garnish your potato pancakes with your favorite toppings for an extra touch. I’ve added a few pieces of Korean chili peppers (kwari gochu) for a decorative and flavorful accent. Feel free to use any toppings you like to personalize your delicious potato pancakes!
