5-Minute Recipe: How to Make Delicious Stir-Fried Chives and Eggs
Today, I’m excited to introduce one of Chef Baek Jong-won’s original recipes: Stir-Fried Chives and Eggs. This dish is so incredibly simple that even a complete beginner can make it in just 5 minutes! I’ve been making it frequently since I was first married because it’s so quick and easy.
Ingredients- 6 large eggs
- 1 handful of fresh chives (about 50g)
- 1 Tbsp oyster sauce
- Sesame oil to taste
Cooking Instructions
Step 1
First, crack 6 large eggs into a clean bowl. Gently whisk them with chopsticks or a whisk until the yolks and whites are well combined, creating a smooth egg mixture. It’s important to mix them thoroughly without over-whipping.
Step 2
Wash the fresh chives thoroughly under running water. Make sure to clean them meticulously to remove any dirt or debris. Then, gently pat them dry with a paper towel or shake off excess water. Cut the chives into bite-sized pieces, about 2-3 cm long, roughly the width of a finger.
Step 3
Place a frying pan on the stove and pour in a generous amount of cooking oil. Turn the heat to high and let the pan heat up thoroughly. Using enough oil is key to prevent the eggs from sticking.
Step 4
Once the oil is hot and just beginning to smoke slightly, quickly pour the prepared egg mixture into the pan. Because the heat is high, the eggs will start cooking immediately.
Step 5
As soon as you pour in the eggs, use chopsticks or a spatula to stir them rapidly in the pan. Stir-frying them in this manner, almost like deep-frying, will result in fluffy, soft curds. Be careful not to overcook; stir until the eggs are about 70-80% set.
Step 6
When the eggs are partially cooked, add the chopped chives and 1 tablespoon of oyster sauce to the pan. The savory oyster sauce will enhance the flavors of both the chives and eggs. Continue stir-frying over high heat for about 1 minute, until all ingredients are well combined. The chives should be wilted and mixed in with the eggs.
Step 7
Finally, turn off the heat immediately. Drizzle a little sesame oil over the dish for added aroma. Gently toss everything together to distribute the sesame oil before the fragrance dissipates. Your delicious and fragrant Stir-Fried Chives and Eggs are now ready to serve! Enjoy it while it’s warm.
