Ingredients

  • 5 fresh eggs
  • 1 stalk of green onion (use both white and green parts)
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce for soup (Guk-ganjang)
  • 2 Tbsp all-purpose anchovy broth base (optional, or use chicken stock)
  • Pinch of black pepper (to taste)
  • 1.4 Liters water

First, crack the 5 eggs into a bowl. Whisk them gently with a fork or a whisk until the yolks and whites are well combined. Don’t over-whisk; a light blend is perfect.

Wash the green onion thoroughly, then thinly slice it crosswise into small, even pieces. Using both the white and green parts will add depth of flavor to the soup.

Now, pour 1.4 liters of clean water into a pot. Add 1 Tbsp of soy sauce for soup (Guk-ganjang), 2 Tbsp of all-purpose anchovy broth base (if you don’t have this, you can omit it or substitute with chicken stock), 1 Tbsp of minced garlic, and a pinch of black pepper to your liking.

Place the pot with the seasoned water over high heat and bring it to a boil. Wait until the liquid starts to bubble vigorously.

Once the water is at a rolling boil, slowly drizzle the whisked eggs into the pot, trying to distribute them evenly around the edges. Resist the urge to stir immediately. Wait for about 15-20 seconds for the egg to cook and float to the surface, forming soft curds. Then, gently stir once or twice with a spoon to break up the egg slightly. Over-stirring can result in tiny egg pieces.

When the egg has formed soft curds, add all the sliced green onions to the pot. Continue to simmer for about 1 more minute. The fresh aroma of the green onions will infuse the broth, adding a pleasant texture.
