First, crack the eggs into a bowl and gently whisk them until combined, being careful not to create too many bubbles. Chop the green onions finely. Adding onion or potato will enrich the flavor, but today we’re keeping it quick and simple!

Fill a pot generously with water and add the prepared anchovies. Let it simmer for about 20 to 30 minutes to create a clear and savory anchovy broth. Once the broth is well-infused, remove and discard the anchovies.

While the broth is simmering, slowly pour the whisked egg mixture in a thin stream around the edges of the pot. Crucially, resist the urge to stir the egg immediately after pouring! Allow the egg to cook undisturbed so it forms delicate ribbons and stays separated, keeping the soup beautifully clear.

Now, add the minced garlic (1/3 Tbsp) and soup soy sauce (1 Tbsp). After adjusting the primary seasoning with the soup soy sauce, it’s best to use salt for the final taste. Seasoning with salt at the end helps maintain the soup’s clear color and pristine flavor.
