Main Ingredients

  • 4 sheets of square fish cakes
  • 1/2 onion
  • A little carrot (about 1/4)
  • 1/2 stalk of green onion
  • 2 Tbsp cooking oil

Seasoning

  • 1 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp corn syrup or rice syrup
  • 50ml water
  • 1 tsp gochugaru (Korean chili flakes, optional, for a spicy kick)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

First, prepare the 4 sheets of fish cake. Cut them into bite-sized pieces, lengthwise. You can cut them into smaller squares for children, or keep them longer for a different texture, according to your preference.

Slice the 1/2 onion thinly. Slice the 1/4 carrot into thin rounds, then julienne them. Cut the 1/2 stalk of green onion into pieces similar in length to the fish cakes. Don’t worry if the vegetables are slightly thick, as they will shrink when cooked.

In a small bowl, combine all the seasoning ingredients and mix well. Mix 1 Tbsp oyster sauce, 2 Tbsp soy sauce, and 1 Tbsp corn syrup (or rice syrup) to create the basic sauce. This golden ratio of soy sauce and oyster sauce adds a wonderful umami flavor.

Heat a pan over medium heat and add 2 Tbsp of cooking oil. Add 1 tsp of minced garlic and cook until fragrant, being careful not to burn it, to create garlic-infused oil. This step greatly enhances the flavor of the stir-fried fish cakes.

Once the garlic oil becomes fragrant, add all the prepared fish cakes and vegetables (onion, carrot, green onion) to the pan. Even if the pan seems full, they will shrink as they cook.

Once the vegetables and fish cakes are lightly stir-fried, pour in all the prepared sauce. Stir well to ensure the sauce coats all the ingredients evenly.

Next, add 50ml of water and continue to stir-fry. Adding a little water prevents the sauce from burning and allows it to soak into the fish cakes, resulting in a softer texture.

If you prefer a spicy flavor, add 1 tsp of gochugaru at this stage. Stir-fry it along with the other ingredients to allow the chili powder’s heat to meld into the dish.
