Super Simple and Savory Doenjang Jjigae Recipe
Doenjang Jjigae: Korea’s Comfort Food Made Easy
Whip up a delicious Doenjang Jjigae with ingredients you already have! This super simple recipe takes just 10 minutes to make. It’s perfect with a warm bowl of rice.
Stew Ingredients
- 3-4 Tbsp Doenjang (Korean soybean paste; mixing with Ssamjang enhances savory flavor)
- 1/2 block Firm Tofu (cubed)
- 1/2 Zucchini (sliced into half-moons or cubes)
- 1/2 Onion (sliced or cubed)
- 1/4 Scallion (sliced diagonally)
- A handful of your favorite mushrooms (e.g., shiitake, oyster mushrooms)
Additional Seasoning (Optional)
- 1/2 Tbsp Ssamjang (for extra umami!)
- 1/2 tsp Minced Garlic
- 1/2 Cheongyang chili pepper (finely chopped, for a spicy kick)

Cooking Instructions
Step 1
In a pot, combine 3-4 cups of water (approx. 600-800ml) and dissolve 3-4 tablespoons of Doenjang thoroughly. Tip: Adding about 1/2 tablespoon of Ssamjang (a thicker, more savory Korean paste) can add a deeper, richer umami flavor. Bring the mixture to a boil over medium heat.
Step 2
While the broth is coming to a boil, prepare your vegetables. Cube the tofu into roughly 1.5cm pieces. Slice the zucchini and onion into half-moons or cubes, according to your preference. Prepare your mushrooms by tearing or slicing them into bite-sized pieces. Slice the scallion diagonally for adding at the end. If you like it spicy, finely chop the Cheongyang chili pepper as well.
Step 3
Once the Doenjang broth begins to boil, add all the prepared ingredients: tofu, zucchini, onion, and mushrooms. Let it come back to a boil over medium heat. Skimming off any foam that rises to the surface will result in a cleaner taste.
Step 4
Check if the broth is boiling again and if all the vegetables are tender. When almost done, add the diagonally sliced scallions and the optional chopped chili pepper. Simmer for another 1-2 minutes to allow the scallion’s aroma to infuse into the stew. Your delicious Doenjang Jjigae is now ready to be enjoyed!
