Main Ingredients
- 1 bowl of rice
- 1/2 bowl of ripe kimchi
- 2 Tbsp sesame oil
- A shallow pot (preferably aluminum, or any pot with a thick bottom)

Cooking Instructions
Step 1
Prepare your ripe kimchi. Measure about half a cup using a paper cup. Chop the kimchi into bite-sized pieces, about 1-2 cm wide.
Step 2
In a shallow pot (or a pot with a thick bottom), spread the chopped kimchi evenly across the bottom. Drizzle 2 tablespoons of sesame oil over the kimchi. Then, carefully spread the warm rice (about 1 bowl) on top of the kimchi, creating a layer. Do not press the rice down firmly; just spread it gently. Now, cover the pot with its lid. About 90% of the cooking process is now complete!
Step 3
Cook over medium heat with the lid on. There’s no need to open the lid or stir the rice and kimchi. After about 5-7 minutes, you’ll start to smell a pleasant, slightly toasted aroma of kimchi. Just wait patiently until you smell this.
Step 4
Once you can smell the delicious toasting kimchi, reduce the heat to low or turn it off briefly. Wait for an additional 20 to 30 seconds. Chef Baek Jong Won recommends 20 seconds. After 20 seconds, turn off the gas completely. The cooking is finished without ever opening the lid or lifting a spoon!
Step 5
Chef Baek Jong Won confidently stated on the show that the kimchi wouldn’t burn despite the smell. Let’s check! Carefully lift the lid and gently stir. You’ll find that the rice grains are perfectly cooked and the kimchi is beautifully golden, not burnt at all. Amazing!
Step 6
Now, the final step! Use a spoon to gently mix the rice and kimchi together until well combined. Be careful not to mash the rice grains. You can enjoy the warm Kimchi Rice as is, or serve it with a fried egg or some seaweed flakes for an even more delicious meal. Enjoy!
