Super Simple Blender Potato Pancakes
[Baby Food] Ultra-Easy Potato Pancakes Made with Blender Batter
I made potato pancakes for an afternoon snack. Sometimes I grate them with a grater and strain them, or slice them thinly and mix with other ingredients, but today I made them the easy way with a blender. Simple recipes are the best when you’re cooking with a baby all day! This is an ultra-simple potato pancake that you can just pour and cook without any separate straining after blending in the blender.
Ingredients- 1 potato
- 1 Tbsp potato starch
- Pinch of salt
- A little brown rice oil or cooking oil
Cooking Instructions
Step 1
Peel the potato and cut it into manageable, bite-sized pieces for blending.
Step 2
Place the cut potato into a blender and blend until smooth. There’s no need to add water; the potato’s natural moisture is usually enough to create a smooth batter. Blend until you achieve a finely mashed consistency.
Step 3
To the finely blended potato mixture, add 1 tablespoon of potato starch and a pinch of salt (adjust salt to your preference, or omit for baby food). Mix everything thoroughly until well combined, forming a smooth batter ready for cooking.
Step 4
Heat a non-stick pan over medium heat and add a generous amount of brown rice oil or cooking oil. Once the oil is hot, ladle the potato batter onto the pan. For a crispier pancake, spread the batter thinly. You can also make smaller pancakes for easier handling.
Step 5
Cook until the edges of the pancake turn golden brown and the surface starts to set. Carefully flip the pancake using a spatula and cook the other side until it’s also golden brown and crispy. Once both sides are beautifully golden, your delicious potato pancakes are ready to be enjoyed!
