You can easily and quickly recreate Yang Se-hyung’s scallion baguette from ‘Taste of the Town’ using common sliced bread you likely have at home. Crispy toasted bread topped with a flavorful scallion sauce makes for a perfect snack for kids or a great beer accompaniment for adults. Ingredients
  • 3 slices of bread (thicker slices recommended)
  • 3 Tbsp cream cheese
  • 2 Tbsp mayonnaise
  • 2 Tbsp condensed milk (adjust sweetness as desired)
  • 1 Tbsp butter
  • 1/2 stalk green onion (use mostly the white part)

Cooking Instructions

Step 1

First, prepare the green onions. Finely chop the white part of the green onion. (Tip: Chopping extra green onions at once can be useful for other dishes.)

Step 2

Melt 1 Tbsp of butter in a pan over medium-low heat. It’s important to melt it gently without burning the butter.

Step 3

Once the butter is melted, add the chopped green onions and stir-fry over medium-low heat for about 2-3 minutes until lightly golden and fragrant. The key is to sauté them to bring out their subtle sweetness and aroma without burning.

Step 4

In a bowl, combine the cream cheese, mayonnaise, and condensed milk. If your cream cheese is firm from the refrigerator, letting it sit at room temperature for a bit or microwaving it briefly will make it easier to mix. (Tip: If you mix the sauce while the pan used for the green onions is still hot, the heat can make the sauce watery. It’s best to let the sautéed green onions cool slightly before mixing them into the sauce.)

Step 5

Mix the softened cream cheese with the mayonnaise and condensed milk until well combined to create the baguette sauce. Aim for a smooth, creamy consistency.

Step 6

Instead of baguette, cut the sliced bread into bite-sized pieces. Using thicker bread slices, like those for sandwiches, will result in a more satisfying and delicious outcome. (Tip: If you dislike crusts, you can trim them off before proceeding.)

Step 7

Generously spread the prepared baguette sauce onto the cut bread slices. (Tip: Don’t skimp on the sauce; more is better for flavor!) Preheat your air fryer to 170°C (340°F) and bake the bread for about 7-8 minutes. Be mindful that bread can burn quickly, so check on it periodically and remove it once the top is golden brown.

Step 8

The bread was browning nicely at first, but while focused on filming the video, I took my eyes off it for a moment, and some edges got a bit burnt. Please remember to check the bread and your timer to avoid burning! (Tip: If the top starts to brown too quickly, you can loosely cover it with aluminum foil to prevent burning.)
