Main Ingredients for Butter-Fried Oysters

  • 250g fresh oysters
  • 1/3 leek (mainly the white part)

Flavor Enhancing Seasonings

  • 20g unsalted butter
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp fresh lemon juice
  • Pinch of black pepper (to taste)

Cooking Instructions

First, remove any shell fragments or debris from the fresh oysters. Sprinkle with 1/2 Tbsp of coarse salt and gently rub the oysters with your hands to clean them softly. Rinse them about 3 times in cold water until clean. Finally, place them in a colander to drain any excess water completely. Excess moisture can cause splattering or dilute the flavor when frying.

Cut the leek (1/3 of a leek) into approximately 5cm lengths. For a prettier presentation and better flavor absorption, cut each piece in half lengthwise. You can substitute with green onions if preferred.

Melt 20g of unsalted butter in a heated frying pan over medium-low heat. Once the butter has melted, add the drained oysters and stir-fry gently, being careful not to burn them, until the oyster surfaces turn opaque.

As the oysters become plump and start to cook, add 1/2 Tbsp of soy sauce and 1/2 Tbsp of fresh lemon juice. Stir well to coat the oysters and continue to cook briefly.
