The Easiest Chive Pancake Recipe You’ll Ever Make
Enjoy a wonderfully crispy and flavorful chive pancake right in your own kitchen! This recipe is incredibly simple and perfect for a quick meal or a delightful appetizer. Feel free to add other ingredients like zucchini, squid, or kimchi to customize your pancake. Let’s get started on this easy and delicious Buchujeon!
Ingredients- 1 bunch fresh chives (approx. 150-200g)
- 1/2 to 1 onion (adjust to your preference)
- A small amount of carrot (for color)
- 1-2 red chili peppers (for garnish and mild spice)
- 1-2 Korean green chili peppers (optional, for extra heat)
- 2 cups pancake mix (approx. 200g)
- 1 large egg
- 1 Tbsp fish sauce (or soy sauce, salt)
- 1 Tbsp minced garlic
- Generous amount of cooking oil (for frying)
Cooking Instructions
Step 1
First, prepare the vegetables that will make your chive pancake so delicious. Wash the chives thoroughly and cut them into approximately 4-5cm lengths. Finely julienne the onion and carrot. Mince the Korean green chilies if you like a bit of heat. Thinly slice the red chili peppers on an angle for a beautiful garnish. Adding a variety of vegetables will enhance the flavor and texture.
Step 2
Now, let’s make the batter for your delightful chive pancake! In a bowl, add 2 cups of pancake mix and crack in 1 large egg. Pour in 2 cups of water (a 1:1 ratio of pancake mix to water works best!). Use a whisk to mix everything smoothly until there are no lumps. Making the batter slightly thinner than usual will result in a crispier and more delicious pancake.
Step 3
Add the flavor-boosting ingredients to your batter. Stir in 1 tablespoon of fragrant minced garlic. For seasoning, you can use salt or soy sauce, but I’m adding 1 tablespoon of fish sauce for an extra umami kick. Mix well to ensure all ingredients are evenly incorporated and there are no clumps.
Step 4
Heat a frying pan over medium heat and generously add cooking oil. Once the pan is sufficiently hot, ladle about one portion of the chive batter onto the pan and spread it out thinly and evenly. Arrange the prepared chives and vegetables attractively on top, and add the sliced red chili peppers for a decorative touch. Cooking over medium heat, rather than high heat, will ensure the pancake cooks through without burning.
Step 5
When the edges of the pancake start to turn golden brown, carefully flip it over using a spatula. Continue to cook until both sides are golden brown and wonderfully crispy. Your delicious chive pancake is now complete! It’s best enjoyed immediately while warm. You can serve it with a side of soy dipping sauce if you like.
