Super Simple Clear Egg Drop Soup
Easy Recipe for a Light and Comforting Clear Egg Drop Soup
This is a super simple clear egg drop soup, perfect to enjoy with spicy kimchi fried rice. My husband once mentioned how delicious it was with spicy food, so I quickly whipped this up while he was showering. We enjoyed it with some savory kimchi fried rice. I usually cook with less salt, so please taste and adjust the seasoning at the end to your preference.
Egg Drop Soup Ingredients- 2 large eggs
- 17g green onion (finely chopped)
- 0.5 Tbsp minced garlic
- 1 red chili pepper (thinly sliced diagonally)
- 2 bouillon cubes (or 750ml anchovy-kelp broth)
- 750ml water
- Pinch of black pepper

Cooking Instructions
Step 1
First, prepare the ingredients for the egg drop soup. Crack 2 large eggs into a clean bowl. Finely chop about 17g of green onion and thinly slice 1 red chili pepper diagonally. Have 0.5 Tbsp of minced garlic ready. If using bouillon cubes, have 750ml of water ready.
Step 2
In a bowl, whisk the 2 large eggs until well combined. Try to whisk them gently to avoid creating too much foam.
Step 3
In a pot, add 750ml of water and 2 bouillon cubes. Bring to a boil over high heat to create the broth. (If you’re not using bouillon cubes and prefer to make your own broth with anchovies and kelp, prepare that now.)
Step 4
Once the broth comes to a rolling boil, reduce the heat to medium-low. Now, slowly drizzle the beaten eggs into the pot in a circular motion. Pouring it slowly, rather than all at once, helps create delicate strands of cooked egg.
Step 5
After adding the egg, resist the urge to stir immediately. Let the egg set slightly and begin to float up in soft curds. Then, gently stir with a spoon to break up the cooked egg into smaller pieces. Skim off any foam that rises to the surface with your spoon; this will make the soup clearer and cleaner.
Step 6
After skimming the foam, stir in 1 Tbsp of tuna extract (or soup soy sauce) for flavor. If you prefer, you can also use fish sauce for an added umami boost. Stir well, then taste the soup. Adjust the seasoning with salt or more soy sauce/fish sauce to your liking. If it tastes too salty, you can add a little more water.
Step 7
Once the soup is seasoned, add the finely chopped green onions, diagonally sliced red chili peppers, and 0.5 Tbsp of minced garlic to the pot. These aromatic ingredients will add a wonderful depth of flavor.
Step 8
Finally, simmer the soup over medium or medium-low heat for a short while, allowing the flavors to meld together. Be careful not to boil vigorously on high heat, as the soup can easily overflow. Once it simmers gently, turn off the heat.
Step 9
With the heat turned off, add a pinch of black pepper to taste. Your super simple and delicious clear egg drop soup is now ready! Enjoy this warm and comforting soup for a satisfying meal.
