Introducing a delicious recipe that transforms stale rice into a meal as wonderful as freshly cooked rice, with minimal effort. This is the perfect solution for a quick and satisfying meal!

Main Ingredients
  • 1 bowl of shredded radish
  • 1.5 bowls of cooked rice (preferably day-old)
  • A pinch of sesame seeds (for nutty flavor!)
  • 1 egg

Seasoning
  • 2 pinches of salt
  • 1/2 Tbsp sesame oil

Cooking Instructions

Step 1

First, wash the radish thoroughly and peel it. Then, shred it into very thin strips. Thinly shredded radish will mix better with the rice and provide a softer texture.

Step 2

Heat a pan over medium heat and add 1/2 Tbsp of sesame oil. Add the shredded radish and 2 pinches of salt. Stir-fry until a fragrant aroma of sesame oil is released.

Step 3

Sauté the radish for about 1-2 minutes until the surface becomes slightly translucent. This process evaporates some of the radish’s moisture and concentrates its natural sweetness, making it more flavorful.

Step 4

In a pot or rice cooker, gather the sautéed radish towards the center. Then, place 1.5 bowls of cold cooked rice on top. If using a rice cooker, press the ‘cook’ button. If using a pot, cover with a lid and steam on low heat for 3 minutes. (It’s even better if you fluff the rice beforehand to prevent clumping).

Step 5

Once the rice is heated through, turn off the heat. Gently mix the rice and the sautéed radish together using a spatula, being careful not to mash the rice grains.

Step 6

Serve the finished radish rice in a bowl. For an extra delicious touch, top it with a fried egg (sunny-side up or fully cooked) and a sprinkle of sesame seeds! If you don’t have an egg or sesame seeds, you can also make a simple soy sauce seasoning (1 Tbsp soy sauce, a little sesame oil, and a pinch of sesame seeds) and mix it in for a satisfying meal.
