Done in a flash with just 3 ingredients! Introducing a super simple recipe for cucumber chili that’s perfect for when you have a poor appetite. The crisp texture and savory seasoning combine for a side dish that’s great with rice or as a snack with drinks.
Main Ingredients- 5 crisp cucumber chilies
Seasoning- 1 Tbsp Mayonnaise
- 1 Tbsp Ssamjang (Korean fermented soybean paste)
- 1 Tbsp Mayonnaise
- 1 Tbsp Ssamjang (Korean fermented soybean paste)
Cooking Instructions
Step 1
First, thoroughly wash the cucumber chilies under running water and trim off the stems. Then, cut them into bite-sized pieces. Cutting them too small might reduce the crunch, so aim for pieces about 2-3 cm long for optimal texture.
Step 2
Place all the cut cucumber chilies into a mixing bowl. Now it’s time to make the dressing. In a separate clean bowl, combine 1 Tbsp of mayonnaise and 1 Tbsp of ssamjang. Use a spoon or whisk to mix them until smooth. It’s important to blend the seasoning well so there are no lumps.
Step 3
Finally, pour all the prepared seasoning over the cucumber chilies in the bowl and gently toss to combine. The key is to mix them lightly so that all the chilies are evenly coated with the seasoning. Be careful not to mix too vigorously, as this can mush the chilies. Your delicious cucumber chili salad is ready!
