Main Ingredients

  • Pork Belly 500g (Use a thick cut for best results)
  • 1 Onion (thinly sliced)

Cooking Instructions

Step 1

First, let’s make the marinade that will be the secret to delicious suyuk. In a bowl, combine 2 tablespoons of doenjang, 1 tablespoon of minced garlic, 1 tablespoon of mirin, and 1 tablespoon of corn syrup. Mix well until there are no lumps to create the marinade. Adding corn syrup will make the meat more tender and give it a nice sheen.

Step 1

Step 2

Prepare your 500g of pork belly. Gently pat dry any excess moisture with paper towels. Then, evenly and thoroughly coat all sides of the pork belly with the prepared marinade. Rubbing the meat gently after applying the marinade will help it penetrate deeper.

Step 2

Step 3

Now, let’s prepare the electric rice cooker. Line the bottom of the inner pot with the thinly sliced onion. The onion will help eliminate any gamey odors from the pork and keep it moist. Place the marinated pork belly attractively on top of the onions.

Step 3

Step 4

Close the lid and select the ‘Steam’ or ‘Multi-Cook’ function on your electric rice cooker. If your cooker doesn’t have these options, the regular ‘Cook’ function can also work, but the ‘Steam’ function yields the most tender texture. Wait for about 50 minutes to 1 hour until cooking is complete. (Cooking time may vary depending on your rice cooker model.)

Step 4

Step 5

Once cooking is finished, open the rice cooker to reveal your delicious suyuk! Steaming, tender pork belly suyuk is ready! Slice it into bite-sized pieces and enjoy it wrapped in lettuce with ssamjang, garlic, and chili peppers. It’s also a delightful addition to kimchi jjigae or budae jjigae.
