Delicious Japanese Fried Rice: Perfect for Kids’ Meals and Quick Adult Lunches

Main Ingredients
- 1 to 1.5 bowls of cold or warm cooked rice
- 1/3 to 1/4 stalk of scallion or the white part of a green onion
- 4 to 5 slices of deli ham
- 1.5 Tbsp mayonnaise
- 1 Tbsp chicken bouillon powder (Torigarasu no moto)
- Pinch of salt
- Pinch of pepper
- 1 Tbsp cooking oil
- 2 eggs
Cooking Instructions
Step 1
Heat 1 Tbsp of cooking oil in a frying pan over low heat. Add the finely chopped scallions and stir-fry until fragrant. The key is to sauté them slowly to bring out their natural sweetness.
Step 2
Once the scallions are softened, add the chopped deli ham and stir-fry together. If you’d like to enhance the savory flavor of the ham, add a tiny pinch of salt and pepper to season lightly. Be careful not to add too much, as it can become too salty.

In a separate bowl, place the warm or cold cooked rice. Add 1.5 Tbsp of mayonnaise and mix well, ensuring the rice grains are not clumped together. The mayonnaise will coat each grain, adding a rich, savory flavor.

Add the sautéed scallions and ham to the mayonnaise-mixed rice and gently combine with a spatula. Clear a space in one half of the frying pan, then crack in the 2 eggs. You can cook the eggs to your preference, whether sunny-side up, over-easy, or fully cooked.

Once the eggs are cooked to your liking, gently mix them into the fried rice with your spatula. Finally, add 1 Tbsp of chicken bouillon powder (Torigarasu no moto) and season the entire dish to taste. The chicken bouillon powder will further enhance the flavor of the fried rice, making it extra delicious.
