Noodles and Kimchi

  • Noodles (Somen or Chujun) 2 handfuls
  • Well-fermented Kimchi 1 cup (approx. 150g)
  • Kimchi Brine 1 cup (approx. 200ml)
  • Store-bought Seolleongtang or Gomtang (ox bone soup) 2 packets (300-400g each)
  • Egg 1

  • Toasted Sesame Seeds (ground) 1/2 Tbsp
  • Sesame Oil 1 Tbsp

Cooking Instructions

First, prepare the kimchi. Finely chop the kimchi into bite-sized pieces. In a small bowl, combine the chopped kimchi with 1/2 Tbsp of ground sesame seeds and 1 Tbsp of sesame oil. Gently mix to coat. This seasoning step adds an extra layer of deliciousness to your kimchi.

Let’s make the refreshing broth! Open the two packets of store-bought Seolleongtang or Gomtang and pour them into a large bowl. Add 1 cup of kimchi brine and mix well. Taste the broth and adjust seasoning with salt or soy sauce if needed – remember, it should be slightly seasoned as the kimchi will add more flavor. Cover and refrigerate until thoroughly chilled. The colder, the better!

Now, it’s time to cook the noodles and the egg. Bring a pot of water to a boil. Add the egg and boil it until cooked through. Once done, remove the egg, rinse under cold water, and set aside to cool. (TIP: Boiling the egg first saves time while the noodles cook!) In the same boiling water, add the 2 handfuls of noodles (somen or chujun). Cook according to the package instructions, usually 3-5 minutes. Stir occasionally with chopsticks to prevent the noodles from sticking. Once cooked, drain the noodles and rinse them thoroughly under cold running water to remove excess starch. Drain very well to prevent a watery dish. This rinsing makes the noodles wonderfully chewy and firm.
