Super Simple Kimchi Fried Rice

When you’re short on time in the morning or need to quickly prepare a lunchbox, here’s a delightful kimchi fried rice that can be made in a flash with the kimchi from your fridge. The spicy and crunchy texture of the kimchi combined with the rice is a flavor everyone, young and old, will love. Top it with a fried egg for a satisfying meal.
Ingredients- 1/2 cup finely chopped kimchi (use kimchi with not too much excess juice)
- 2 Tbsp kimchi juice
- 1 bowl warm rice (approx. 200g)
- 1 egg
- 1 tsp finely minced green onion (optional, adds flavor)
- A pinch of seaweed flakes (for garnish)
- 1 tsp sesame oil
- A pinch of salt (adjust according to kimchi’s saltiness)
Cooking Instructions
Step 1
First, heat 1 tsp of sesame oil in a pan over low heat. Add the finely chopped kimchi and stir-fry for 1-2 minutes until it becomes slightly tender and fragrant. Be careful with the heat to prevent the kimchi seasoning from burning.
Step 2
Add 1 bowl of warm rice to the stir-fried kimchi. Use a spatula to break up any clumps of rice and mix thoroughly, stir-frying for about 2-3 minutes until each grain of rice is coated with the kimchi seasoning.
Step 3
Now, add 2 Tbsp of kimchi juice to enhance the umami flavor of the fried rice and stir-fry it with the rice. Since the kimchi juice alone might not be enough, taste the mixture and add a tiny pinch of salt to adjust the seasoning. The saltiness will vary depending on the kimchi itself, so always taste before adding more.
Step 4
Finally, add 1 tsp of finely minced green onion and quickly mix it in to add a refreshing aroma. The mild pungency of the green onion will further enhance the fried rice’s flavor. Stir-fry for just about 10 more seconds to finish.
Step 5
Transfer the finished kimchi fried rice to a nice serving bowl. After plating the rice, fry 1 egg to your liking (sunny-side up or over-easy) and place it generously on top of the rice. When the runny yolk of a sunny-side-up egg bursts, it blends with the fried rice for an even creamier taste.
Step 6
Just before serving, sprinkle a pinch of seaweed flakes over the fried rice and the fried egg. The savory flavor of the seaweed flakes will enrich the taste of the kimchi fried rice. Enjoy a hearty meal with this delicious kimchi fried rice!
