Mocha Batter Ingredients

  • 2 packets Black Coffee Mix
  • 2 Tbsp Hot Water
  • 5 Tbsp Sugar
  • 7 Tbsp Cake Flour (or All-Purpose Flour)
  • 1 Egg
  • 30g Butter (room temperature)

Before you begin, ensure your butter and egg are at room temperature. Take them out of the refrigerator about 30 minutes beforehand so they lose their chill. This will help them blend smoothly into a cohesive batter.

In a bowl, place the softened room-temperature butter. Use a mixer or a whisk to cream it until it’s smooth and fluffy. Then, add the cake flour and sugar. Gently mix them together using a spatula, as if you’re folding. Mix just until you no longer see streaks of flour. Overmixing can develop gluten and result in a tough texture.

Crack the room-temperature egg into the bowl with the butter, flour, and sugar mixture. Stir everything together until it’s well combined and uniform. To prevent the egg from separating, it’s best to mix gently and gradually.

In a separate small bowl, combine the 2 packets of black coffee mix with 2 tablespoons of hot water. Stir thoroughly until the coffee is completely dissolved and there are no clumps. Dissolving the coffee in warm water helps to release its full aroma and flavor.

Pour the dissolved coffee mixture into the batter you prepared earlier. Stir until all the ingredients are evenly incorporated. Transfer the finished mocha batter into a piping bag. Alternatively, you can put it into a ziplock bag and snip off a small corner to make it easy to pipe.

Cut each string cheese stick into approximately three equal pieces. You can adjust the size based on how large your morning bread rolls are.

Carefully make a cross-shaped incision (+) on the top of each morning bread roll using a knife. Be careful not to cut too deep. Gently insert 2-3 pieces of the cut string cheese into each incision. The cheese will melt beautifully as it bakes, adding a delicious savory element.

Using your piping bag or prepared ziplock bag, pipe the mocha batter onto the top of each morning roll, covering about three-quarters of the surface. Piping a generous amount will result in a richer flavor when baked.

Preheat your air fryer to 180°C (350°F). Place the prepared morning rolls into the preheated air fryer and bake for 7-8 minutes, or until the mocha topping is a golden brown and the cheese is melted and bubbly.
