Main Ingredients- 1/4 head of fresh Napa cabbage (medium size)
- 1 Tbsp coarse salt (for blanching)

Step 1
First, wash the Napa cabbage thoroughly and prepare it. Bring a generous amount of water to a boil in a pot. Once boiling, add 1 tablespoon of coarse salt. Submerge the prepared cabbage and blanch for a very short time, about 30 seconds to 1 minute, just until it slightly wilts and looks a bit translucent. Be careful not to overcook, as it will become mushy. Drain the blanched cabbage and rinse it under cold water to cool. Squeeze out excess water firmly with your hands, then cut the cabbage into bite-sized pieces (about 3-4 cm long).
Step 2
Place the squeezed cabbage in a mixing bowl. Add 1/2 tablespoon of minced garlic and 1/2 tablespoon of fish sauce. If you don’t have fish sauce, you can use soup soy sauce, but be mindful that it can be darker in color, so adjust the amount accordingly. Add a pinch of salt to season. It’s best to add the seasonings first, gently mix, taste, and then add more salt if needed.

Finally, add 1 tablespoon of sesame oil and 1/2 tablespoon of sesame seeds. Gently toss and mix until well combined. If you like, sprinkle a few black sesame seeds on top for a decorative touch, making it look even more appealing. If you don’t have black sesame seeds, don’t worry, it won’t affect the taste at all.
