Today, I’m sharing a fantastic recipe for a delicious japchae without meat, perfect for those times you need a quick and satisfying meal. By simply pre-soaking the glass noodles, you can easily create this one-pan wonder. Let’s get started on making your one-pan japchae!

Main Ingredients

  • 120g glass noodles
  • 1 handful spinach (or chives)
  • A little enoki mushrooms
  • 1/2 onion
  • 50g carrot
  • A little red and yellow bell pepper

Seasoning Ingredients

  • 4 Tbsp soy sauce
  • 2 Tbsp cooking oil
  • 1 Tbsp perilla oil
  • 1 Tbsp sesame oil
  • 1/2 stalk green onion
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • Pinch of black pepper
  • Sesame seeds

Cooking Instructions

Step 1

First, soak the 120g of glass noodles in warm water for about 1 hour until fully softened. Soaking them in advance will significantly reduce cooking time and ensure the noodles are wonderfully tender.

Prepare the vegetables. Thinly slice the carrot, onion, and bell peppers (red and yellow). Trim and prepare the enoki mushrooms. Wash the spinach thoroughly. (If using chives, cut them into similar lengths.)

Now, grab a wide pan. Drizzle 1 Tbsp of perilla oil and 2 Tbsp of cooking oil into the pan. Start by sautéing the minced garlic over low heat until fragrant. Once the garlic aroma develops, add the firmer vegetables, like the carrots, and stir-fry them briefly.

When the carrots are slightly tender, add the remaining vegetables such as onion, enoki mushrooms, and bell peppers to the pan and continue to stir-fry. Once the vegetables are somewhat cooked, add the pre-soaked glass noodles.

As the vegetables and noodles come together, season with 4 Tbsp of soy sauce. Stir well to ensure the glass noodles absorb the soy sauce evenly.

Spinach cooks very quickly and is sensitive to heat, so it’s best added towards the end. Add it to the pan and stir gently for just a moment until it wilts and is ready to eat.

Now it’s time to add the rest of the seasonings. Sprinkle in a pinch of black pepper to enhance the overall flavor profile of the japchae.
