- Pinch of black pepper (coarsely ground)
- A little sesame oil
Cooking Instructions
Step 1
First, let’s prepare the star of our rice bowl: the fresh onions. Wash 5 large fresh onions, peel them, and then slice them thinly. Lightly oil a pan and add all the sliced onions to start stir-frying.
Step 2
The key to this delicious onion rice bowl lies in this stir-frying process! Stir-fry the onions until they become translucent and tender. The trick is to continue cooking until they turn a beautiful brown color, allowing their natural sweetness to caramelize. The longer you stir-fry, the deeper and sweeter the flavor will become. Be patient, and you’ll be rewarded with a rich, sweet aroma.
Step 3
Once the onions are sufficiently sautéed, add minced Cheongyang chili peppers and stir-fry together. If you enjoy a spicier kick, add a generous amount of Cheongyang chili powder and mix well. The sweetness of the onions combined with the pleasant heat of the chili peppers creates a fantastic harmony. Season with salt to taste and add a sprinkle of coarsely ground black pepper. To add a touch of color, I’m adding a bit of chives from my freezer and mixing them in. If you have fresh chives, add them at the very end and cook briefly.
Step 4
Finally, drizzle a drop or two of sesame oil for a nutty aroma. Turn off the heat, let the seasoning meld for a moment, and then prepare to serve it over rice.
Step 5
Since this is a rice bowl, let’s prepare some beef to go with it! Lightly season some beef with salt and pepper, then pan-fry it until golden brown. Once cooked, slice the beef into bite-sized pieces. Are you worried that it might not be a proper ‘rice bowl’ without a sauce? Don’t worry at all! The moisture and sweetness released from the well-cooked onions will combine with the rice, creating a wonderfully moist and flavorful rice bowl. One bite will have you captivated by its delicious sweetness.
