  • 5-6 tsp soy sauce (standard brewed soy sauce)
  • 1 tsp sesame oil
  • 1 tsp cooking oil

First, peel the potatoes and wash them thoroughly. Slice them into bite-sized pieces, about 0.5 cm thick. Peel and thinly slice the onion as well. Heat a frying pan over medium heat and add sesame oil and cooking oil in a 1:1 ratio. About 1 teaspoon of each is sufficient. Once the oils are evenly distributed in the pan, add the sliced potatoes and begin to stir-fry.

Stir the potatoes occasionally to prevent them from sticking. When the surface of the potatoes starts to look slightly translucent and they begin to cook, add the sliced onions and stir-fry them together. Adding a generous amount of onion will enhance the sweetness and significantly improve the flavor of the pan-fried potatoes, so feel free to adjust the onion quantity to your preference! Continue to stir-fry with the potatoes until the onions become translucent.

When the potatoes and onions are about halfway cooked, carefully pour 5-6 teaspoons of soy sauce around the edges of the pan. Using brewed soy sauce can add a deeper umami flavor. Stir and cook, allowing the soy sauce to lightly caramelize and develop its aroma as it touches the hot pan. The amount of soy sauce can be adjusted based on the quantity of potatoes and your personal taste. If you’re using a very salty soy sauce, it’s best to use less.
