  • 2 servings Pasta (approx. 200g)
  • 1 Tbsp Pollack Roe (scraped from the membrane)
  • 10 cloves Garlic (thinly sliced)
  • 1/4 Onion (thinly sliced)
  • 1/3 cup Milk (approx. 80ml)
  • 3 ladles Pasta Cooking Water (approx. 150ml)
  • A little shredded Seaweed (for garnish)

Seasoning & Others

  • 4 Tbsp Olive Oil (approx. 60ml)
  • A pinch of Salt
  • 1-2 Tbsp Low-Sodium Soy Sauce (adjust according to pollack roe saltiness)

Cooking Instructions

First, bring a large pot of generously salted water to a boil for the pasta. While the water heats up, thinly slice the garlic into slivers and thinly slice the onion. Gently scrape the pollack roe from its membrane using the back of a knife. (Using only the roe, not the membrane, ensures a smooth texture without chewy bits.)

Once the water is rapidly boiling, add 1 Tbsp of olive oil, 0.5 Tbsp of salt (optional), and the pasta for 2 servings. We’re aiming for ‘al dente’ because the pasta will be finished in the pan with the sauce, so cook it for about 5-6 minutes, or 2-3 minutes less than the package instructions. Reserve about one ladleful of the pasta cooking water before draining.

While the pasta cooks, heat 4 Tbsp of olive oil in a wide pan over medium-low heat. Add the sliced garlic and sauté slowly until it’s fragrant and lightly golden brown, being careful not to burn it. Infusing the oil with garlic flavor at this stage significantly deepens the pasta’s overall taste.

Once the garlic is nicely browned, add the sliced onion and sauté together until it becomes translucent and releases a sweet aroma. This is a great point to add any other ingredients you have on hand for a more substantial dish! For example, cooked shrimp, mushrooms, bacon, or broccoli would be delicious additions at this stage.

Transfer the ‘al dente’ pasta directly from the pot into the pan with the garlic and onions. Add about one ladle of the reserved pasta cooking water and stir-fry over medium heat, allowing the pasta and sauce ingredients to mingle and coat the noodles.

Now it’s time for our star ingredient: the pollack roe. Add the 1 Tbsp of prepared pollack roe to the pan and quickly stir it into the pasta and sauce. The pollack roe’s distinctive salty and umami flavor will now permeate the entire dish.

Next, pour in 1/3 cup of milk for added creaminess. The milk will make the sauce richer and smoother, effectively balancing the saltiness of the pollack roe. If you don’t have milk, you can substitute it with 2 slices of processed cheese, which will melt into the sauce and add a lovely cheesy flavor.

Add 1 Tbsp of soy sauce to enhance the umami. If your pollack roe is particularly salty, use only 1 Tbsp of soy sauce or omit it. If it’s less salty, you can increase the soy sauce to 2 Tbsp. Finally, adjust the overall seasoning with a pinch of salt as needed. (Feel free to adjust the soy sauce and salt amounts based on the saltiness of your pollack roe!)

Finally, increase the heat to high and stir-fry vigorously for about 1-2 minutes, until the pasta is fully cooked and the sauce has emulsified and coats the noodles beautifully. If the sauce seems too thick, gradually add more reserved pasta water until you reach your desired consistency. Once the sauce coats the pasta nicely, remove from heat.
