I made a super simple quail egg soy sauce braise (Jangjorim) at home today, a dish that both kids and adults absolutely love! It’s the perfect side dish for rice. The savory and sweet flavor whets the appetite, and the tender texture of the quail eggs is wonderfully appealing. You can make this easily with just a few ingredients.

  • 1-3 Cheongyang peppers or Kkori peppers

Braising Sauce

  • 5 Tbsp Soy sauce
  • 2 Tbsp Mirin (rice wine)
  • 2-3 Dashes Black pepper
  • 1.5 Tbsp Sugar
  • 1.5 Tbsp Corn syrup or Oligosaccharide
  • 3 Cups Water

First, prepare the peeled quail eggs. If you don’t have pre-peeled ones, you can boil shell-on quail eggs by adding a little salt and vinegar to boiling water and simmering them over medium heat for about 10 minutes. This makes them easier to peel.

▶️ Make the Delicious Braising Sauce: In a bowl, combine 5 tablespoons of soy sauce, 2 tablespoons of mirin, a few dashes of black pepper, 1.5 tablespoons of sugar, and 1.5 tablespoons of corn syrup or oligosaccharide. Mix well. If you prefer a milder flavor, you can reduce the amount of soy sauce to adjust it to your taste. Feel free to customize the soy sauce quantity based on your preference.

Place the prepared peeled quail eggs in a pot. Pour in the braising sauce and 2 cups of water. Simmer over medium-low heat, allowing it to reduce and braise. You’ll notice the quail eggs gradually changing to a delicious color as they cook. Keep stirring to prevent sticking and ensure even cooking.

To enhance the flavor and add a tempting glossy sheen, drizzle in about half a tablespoon of sesame oil. However, be mindful that adding too much can alter the original taste of the quail egg jangjorim, so it’s recommended to use a very small amount or omit it altogether.

Prepare the Kkori peppers or Cheongyang peppers. These add a pleasant hint of spiciness. If you have young children who are sensitive to spice, use Kkori peppers or omit the peppers entirely. Adjust the quantity or skip them according to your preference.
