Super Simple Radish Salad Bibimbap: Ready in 15 Minutes!

Even without any fancy ingredients, a single bowl of delicious seasoned radish (mu saengchae) is all you need. With just a spoonful of gochujang (Korean chili paste) and a drizzle of sesame oil, you can quickly mix it all up for a fantastic meal. It’s a true rice-thief!
Main Ingredients- 1 medium radish
- 2 Tbsp salt (levelled)
- 5 Tbsp gochugaru (Korean chili flakes, levelled)
- 3 Tbsp sugar
- 1 Tbsp minced garlic
- A pinch of toasted sesame seeds
- A few scallions, thinly sliced (optional)
Cooking Instructions
Step 1
I’ve prepared a fresh, in-season radish. I chose one with vibrant radish greens attached. We’ll use the greens for a doenjang jjigae (soybean paste stew) and make a refreshing, crisp radish salad (mu saengchae) with the radish itself.
Step 2
After cleaning the radish greens, I set aside the portion for the doenjang jjigae. For the radish salad, I’ve reserved about 1/5th of the radish. You can also make a delicious doenjang jjigae with the greens!
Step 3
Wash the prepared radish thoroughly, then thinly julienne it. Cutting it into uniform thickness will help it absorb flavors evenly and improve the texture.
Step 4
Add 2 tablespoons of salt to the julienned radish and mix well. For the salt, don’t scoop it heaped; use a levelled spoonful. If your radish is particularly large, you might need up to 3 tablespoons. Salting the radish draws out its moisture, ensuring a crisp texture.
Step 5
Now, add 5 tablespoons of gochugaru (Korean chili flakes) and gently mix. Similar to the salt, using levelled spoonfuls for the gochugaru makes it easier to control the amount. Toss gently to ensure the chili flakes coat the radish evenly.
Step 6
After mixing with the chili flakes, the radish has taken on a beautiful red hue. It looks appetizing already!
Step 7
Next, add 1 tablespoon of minced garlic, 3 tablespoons of sugar, and a generous pinch of toasted sesame seeds. Mix everything together thoroughly again. If you prefer a slightly tangy flavor, feel free to add 1 tablespoon of vinegar. Chopped scallions, added at this stage, will bring a wonderful fragrance and extra texture.
Step 8
Your delicious radish salad (mu saengchae kimchi) is complete! Does it seem like making kimchi takes a long time? Not at all! This is a super-easy recipe that takes less than 15 minutes. Adding freshly sliced scallions will enhance the overall flavor.

Doesn’t it look appetizing? Since we’re not using fermented seafood (jeotgal), it has a clean, refreshing taste that’s incredibly satisfying. It’s a simple yet perfect radish salad that I absolutely love.

I quickly prepared the doenjang jjigae and the radish salad, and before I knew it, I had a hearty meal ready on the table in about 30 minutes.

Serve this over a bowl of warm white rice. Add a generous portion of the radish salad, drizzle with fragrant sesame oil, and add a little gochujang to your liking – be careful not to add too much, as it can be salty. Even though it seems so simple, the taste is truly exceptional. It’s guaranteed to make you want more rice!
