Main Ingredients
- 2 boneless, skin-on chicken thighs or drumsticks (approx. 200-250g), prepared
- 1/2 medium onion, roughly chopped
- 3 cloves garlic, whole
- 2 Tbsp cooking wine (cheongju) or soju
Chicken Seasoning
- 1 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp soy sauce for soup (guk-ganjang)
- 1 handful chopped green onions (about 1/4 cup)
- 1 Tbsp minced garlic
- 2 slices of Korean chili pepper (cheongyang chili), finely chopped (optional, for extra spice)
- 1 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp soy sauce for soup (guk-ganjang)
- 1 handful chopped green onions (about 1/4 cup)
- 1 Tbsp minced garlic
- 2 slices of Korean chili pepper (cheongyang chili), finely chopped (optional, for extra spice)
Cooking Instructions
Step 1
Rinse the prepared chicken pieces thoroughly. Place the chicken pieces, roughly chopped onion, whole garlic cloves, and cooking wine (or soju) into the inner pot of your rice cooker. (If you only have minced garlic on hand, you can substitute 1 Tbsp of minced garlic here.)
Step 2
Pour in 400ml of water and close the rice cooker lid. Select the ‘Multi-cook’ or ‘Cook’ function and set the timer for 20 minutes. Cooking times may vary slightly depending on your rice cooker model.
Step 3
After 20 minutes, carefully remove the cooked chicken from the rice cooker. Leave the chicken broth in the pot.
Step 4
While the chicken is still warm, shred or cut the meat into bite-sized pieces. Discard the bones and skin.
Step 5
(Optional) For a richer broth flavor, add the reserved chicken bones back into the pot with the broth and cook on ‘Multi-cook’ for another 10 minutes. You can skip this step if you prefer a lighter soup.
Step 6
In a separate bowl, combine the shredded chicken with the seasoning ingredients: red pepper flakes, chopped green onions, minced garlic, soy sauce for soup, and chopped Korean chili pepper (if using). Mix gently until the chicken is evenly coated.
Step 7
Let the seasoned chicken sit for a few minutes to allow the flavors to meld.
Step 8
Remove and discard the chicken bones from the broth (if you added them in step 4). Add the seasoned chicken into the rice cooker with the broth. Select ‘Multi-cook’ again and cook for another 10 minutes to allow the chicken to absorb the broth’s flavor.
Step 9
Your delicious and slightly spicy Dak Gomtang is now ready! Taste the broth and adjust the seasoning with salt as needed. Finish with a sprinkle of black pepper for extra aroma. Serve with a bowl of rice for a hearty and comforting meal!
