I fondly remember my son making me salmon soy sauce marinade while I was in the hospital, and how deliciously I enjoyed it. Inspired by that memory, today I’m making it super simple using tsuyu sauce. This recipe allows you to create a wonderful salmon dish with minimal ingredients. It’s perfect as a side dish for rice or even as a simple appetizer with drinks. Shall we make this delicious marinated salmon together?
Main Ingredients
- 600g Salmon, suitable for sashimi
- 1 Onion (medium size)
- 2 Korean Green Chilies (add more if you like it spicy)
- 1 Lemon (for a refreshing aroma)
Marinade Base
- 2 cups (approx. 400ml) Store-bought 4x Concentrated Tsuyu Sauce
- 1 cup (approx. 200ml) Soy Sauce for brewing
- 2 cups (approx. 400ml) Water
- A pinch of whole peppercorns or coarsely ground pepper (to taste)

Cooking Instructions
Step 1
First, let’s prepare the vegetables and lemon. Peel the onion, wash it thoroughly under running water, and then thinly slice it into julienne strips. Remove the stems from the Korean green chilies and chop them finely. Since we’ll be using the lemon peel, scrub it clean with baking soda or coarse salt, then slice it thinly. Remove any seeds if present.

Next, we’ll prepare the salmon. Cut the salmon into bite-sized pieces. Typically, cutting it into 2-3 cm thick pieces provides a great texture and allows the marinade to soak in well. Using fresh salmon will ensure it’s not fishy and tastes even better.

Now, let’s get ready to assemble the marinated salmon. Prepare an airtight container. Spread the julienned onions evenly on the bottom of the container. Arrange the chopped green chilies and lemon slices attractively on top. Layering the vegetables first helps to eliminate any fishy smell from the salmon and enhances its flavor.

Carefully layer the prepared salmon pieces on top of the vegetables, making sure they don’t overlap too much. Leaving a little space between the pieces will help the marinade penetrate evenly.

Now, let’s make the delicious marinade base. In a bowl, combine the 4x concentrated tsuyu sauce, soy sauce for brewing, and water. Mix them well. Adding a pinch of pepper to taste will further enhance the flavor. Pour this mixture over the salmon in the container, ensuring the salmon is fully submerged. This is crucial for even marination.

Close the lid tightly and refrigerate for at least half a day (minimum 12 hours) to marinate. As time passes, the salmon’s flavor will deepen, and the marinade will soak in, making it even more delicious. Marinating overnight will result in an even richer taste.

Once the marinated salmon is ready, cut it into desired serving sizes and arrange it beautifully on a plate. It’s perfect served over warm rice as a salmon bowl or paired with a fresh salad. Store any leftover marinated salmon in the refrigerator and consume within 3-4 days.
