Prepare your ingredients for making gimbap. You’ll need about 1 bowl of warm rice, 2 sheets of seasoned seaweed (gim) specifically for gimbap, and 2 pickled radish sticks (danmuji). Trim the danmuji to fit the length of your seaweed sheets if needed.

Lay a sheet of seasoned seaweed on a bamboo rolling mat or a clean work surface. Spread the warm rice evenly and thinly over the seaweed, leaving about a 1 cm border at the top. Don’t overfill with rice, or the roll might break. Place the pickled radish sticks horizontally on top of the rice. Carefully and tightly roll the seaweed from the bottom up, pressing gently to ensure a compact roll. A firm roll prevents the fillings from spilling out.

Once rolled, use a sharp knife to cut the gimbap into bite-sized pieces, about 2-3 cm thick. To make cutting easier and prevent sticking, you can lightly dampen the knife with water between cuts.
