Super Simple Scallion and Egg Pancake
Made with just a few ingredients, this scallion and egg pancake is surprisingly delicious! The crispness of the scallions combined with the tender egg creates a delightful flavor. Perfect as a simple side dish or a quick snack.
Main Ingredients- 5 stalks fresh scallions
- 4 fresh eggs
- 4 pinches salt (for egg seasoning)
- 30g bell pepper (optional, for color and flavor)
- 1 Tbsp pancake mix
Dipping Sauce- 2 tsp soy sauce
- 1 tsp water
- 1 tsp sugar
- 1 tsp vinegar
- Pinch of red pepper flakes (optional)
- Pinch of toasted sesame seeds (optional)

Cooking Instructions
Step 1
Thoroughly wash the scallions. Cut them into halves lengthwise, and then cut the root end in half as well. This helps them cook more evenly and quickly.
Step 2
In a wide bowl, crack the 4 eggs and season with 4 pinches of salt. Add 1 tablespoon of pancake mix and whisk well to create the egg batter. Finely chop 30g of bell pepper and add it to the batter for added color and flavor.
Step 3
Lightly grease and preheat a non-stick pan over medium-low heat. Pour about one ladleful of the egg batter into the pan and spread it thinly. Arrange the prepared scallions evenly over the batter.
Step 4
Pour the remaining egg batter over the scallions, ensuring they are fully covered. Tilt the pan gently or use chopsticks to spread the batter evenly, so it covers the entire surface.
Step 5
Once the bottom is golden brown and set, carefully flip the pancake. Cook for about 30 seconds on the second side, then flip it back over. Covering the pan with a lid for the last minute or so will help ensure the inside is cooked through and moist.
Step 6
This recipe was made using a 28cm (approximately 11-inch) frying pan, and the finished pancake was served on a 28cm plate. Feel free to adjust the pan size accordingly.

Cut the pancake into bite-sized pieces and arrange them attractively on a serving plate.
