Super Simple Soy-Braised Eggs
Quick and Easy Soy-Braised Eggs
This is an incredibly simple recipe for soy-braised eggs! Perfectly seasoned, slightly spicy, and wonderfully sweet, these eggs are a fantastic side dish.
Main Ingredients- 6 hard-boiled eggs
- 2 stalks of green onion (scallions)
- 5 Korean chili peppers (cheongyang chili)
Braising Sauce- 4 Tbsp water
- 2 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or corn syrup/sugar)
- 1 Tbsp cooking wine (mirin or soju)
- 1 Tbsp minced garlic
- 4 Tbsp water

Cooking Instructions
Step 1
First, prepare the braising sauce. In a pot, combine 4 Tbsp of water, 2 Tbsp of soy sauce, 1 Tbsp of oligosaccharide, 1 Tbsp of cooking wine, and 1 Tbsp of minced garlic. Stir everything together until well combined. The oligosaccharide adds a lovely sheen and a pleasant sweetness.
Step 2
Once the sauce is ready, add the aromatics. Wash the green onions and cut them into large, 2-3 inch pieces, keeping them whole. Remove the stems from the Korean chili peppers and add them whole to the pot as well. These will infuse the sauce with their subtle heat and fragrance as they cook.
Step 3
Finally, carefully add the 6 peeled hard-boiled eggs to the pot. Reduce the heat to low, cover the pot with a lid, and let it simmer gently for about 30 minutes. To ensure the sauce evenly coats the eggs, you can gently roll them around in the pot once or twice during the simmering process. After 30 minutes, your delicious soy-braised eggs are ready! They are perfect served over warm rice.
