Main Ingredients

  • Pork neck or shoulder (use a mix with some fat if you dislike lean cuts) 1.5 handfuls (approx. 150g)
  • 1/5 head of cabbage
  • 2 onions
  • 1 green onion
  • 2 Korean chili peppers (cheongyang peppers)
  • 2 Tbsp sesame oil
  • 1.5 cups water (approx. 300ml)

Soy Sauce Marinade

  • 12-14 Tbsp soy sauce
  • 2-3 Tbsp sugar
  • 2-3 Tbsp corn syrup or rice syrup
  • 2 Tbsp minced garlic

Cooking Instructions

Step 1

Before you start cooking, soak the pork in about 1/2 cup of soju for 30 minutes to remove any gamey odors. This step will make the meat much more tender and flavorful.

Step 1

Step 2

If you’re using glass noodles, soak them in lukewarm water for at least 20 minutes before you begin cooking. They’ll become perfectly tender.

Step 2

Step 3

Drain the soju from the pork after soaking. Add all the soy sauce marinade ingredients to the pork and mix well. Let it marinate for about 20 minutes. Marinating allows the flavors to penetrate deeply, resulting in a richer taste.

Step 3

Step 4

Prepare the vegetables. Slice the onions into thin strips (about 0.5cm thick). Slice the green onion and Korean chili peppers diagonally. Cut the cabbage into bite-sized pieces. Slicing them this way ensures even cooking and a pleasant texture when stir-fried.

Step 4

Step 5

Heat a pan over medium-high heat. Add the marinated pork and stir-fry until the surface is lightly browned. This searing process enhances the pork’s flavor.

Step 5

Step 6

When the pork is about 90% cooked, add all the prepared vegetables (onions, cabbage, green onions, chili peppers) to the pan and continue stir-frying. Cooking quickly over high heat helps maintain the vegetables’ crispness.

Step 6

Step 7

Once the vegetables start to soften slightly, pour in 1.5 cups of water. Stir everything together to combine the sauce and ingredients. When the liquid begins to boil, add the soaked glass noodles and stir-fry until the noodles are tender and have absorbed the sauce. The noodles will become extra delicious!

Step 7

Step 8

When the glass noodles are fully cooked and the sauce has reduced to a nice consistency, turn off the heat. Drizzle in 2 tablespoons of sesame oil for a fragrant finish that makes the dish even more appealing.

Step 8

Step 9

Transfer the finished soy sauce pork bulgogi to a serving plate. It’s a complete and satisfying meal! Enjoy it with a bowl of warm rice.
